The restaurant specialises in two iconic styles of udon noodles: Himokawa Udon from Gunma - prized for its wide, flat shape and silky-smooth texture (once a delicacy reserved for emperors and shoguns); and Sanuki Udon from Kagawa, with a satisfying, bouncy firmness and a legacy stretching back over 1,200 years. Every bowl is handcrafted using techniques passed down through generations of Japanese.
